Melting Moments
Delightful little biscuits, rolled in coconut and topped with a cherry. Melting moments can also be made with oats or crushed cornflakes, if coconut isn’t your thing.

Another day, another classic recipe. When it comes to baking, it’s easy to get swept up in the many recipes on the internet, but I’m slowly learning that often, these recipes aren’t all that they’re cracked up to be. Melting Moments biscuits, however, are a recipe that I promise you’ll love!
When it comes to recipes, there are a few things I look for…
Number one: to be in metric! Surely I’m not the only one who gets frustrated trying to convert cups and ounces when you find a tempting recipe on Pinterest? Being in the UK, we use scales and grams – many of us don’t even have actual cup measurements.
Number two: Quick, easy and well tested, with guaranteed & familiar results. Who wants to waste their time on biscuit recipes that aren’t fool-proof?
Number three: Something that I know I will have the ingredients to hand, and I won’t need to trawl the supermarket for. The ingredients for Melting Moments are very simple!
It can be tempting to bake something out of the ordinary, something you’ve never baked before or even tasted (hello,ย Irn Bru cupcakes!), but often the best bakes are those that you know & love, those you know will be a winner.
Melting Moments biscuits are one of those bakes that I always remember being on offer in coffee shops and cafes. Something so simple but made a little bit more special thanks to a gem-like cherry placed on top. Perfection!
Top Tips for Melting Moments:
โข My Melting Moments recipe uses desiccated coconut, but you can use rolled oats or crushed cornflakes, if they’re more your thing.
โข You might think the balls that make the biscuits seem quite small, but don’t worry; when baking, they flatten out, giving you a generously sized biscuit.
โข Use wet hands to roll the balls for your biscuits. Not only does it stop them from sticking to your hands, but it also helps the coconut stick to the biscuits.


Melting Moments
INGREDIENTS
- 75 g Caster Sugar
- 110 g Butter or Margarine ((softened))
- 1 Free-range Egg
- 1 tsp Vanilla Extract
- 175 g Self Raising Flour
- Desiccated Coconut
- Glace Cherries
INSTRUCTIONS
- Pre-heat your oven to 180ยฐc (or 160ยฐc for a fan assisted oven or Gas Mark 4) and grease a couple of baking trays with some excess butter/margarine.
- Cream together the sugar and butter/margarine until light and fluffy. Add the vanilla & egg, and beat together until combined.
- Stir in the flour and mix until combined into a dough.
- Divide the dough into 16 pieces (about a teaspoon sized). With wet hands, roll each piece into a ball before rolling in the coconut.
- Place each coconut ball onto your pre-greased trays, leaving a bit of space between and gently press each down a little with your fingers. Top each biscuit with a small piece of cherry.
- Bake in your pre-heated oven for 10-15 minutes, until golden.
- Leave on the trays until cool enough to touch before transferring to a wire wrack to cool completely.
IMPORTANT NOTE:
All my recipes are developed using a digital scale and the metric system (grams and millilitres). Cup measurements are available as a conversion but these, unfortunately, won’t always be as accurate. For best results, I always recommend baking with a digital scale.


these look lovely and easy to make with children. I love the cherry on the top of each one too. as someone who is not good at making biscuits, I think these could turn out ok!
