I don’t know about you but we’re well & truly over winter! Don’t get me wrong, I much prefer the colder seasons to the heat of summer but my perfect weather can be described as, “freezing cold with the sun in the sky,” – certainly not the rain, sleet, snow & the gale force winds that we seem to be in the midst of at present. If there’s one type of baking I feel I’ve mastered, it’s pancakes! I’ve even joked about writing my own recipe book solely of different pancake recipes. And it all started with these little beauties. Drop Scones, also known as Scotch Pancakes, are something I’ve been baking since my childhood and something that Granny has always been on hand to help perfect. Similar to American Pancakes but way simpler, they make a great treat for breakfast or just for snacking.

Stress & mess aside, I really do love baking with The Boys. John in particular loves nothing more than putting on his apron & chef’s hat and getting his hands floury. It doesn’t actually matter what you tell him we’re making, he will always tell people he’s been, “making biscuits!” But as far as recipes for baking with kids go, I’m always a fan of something, quick, easy & with flavours that meet their approval and these Rainbow Cookies come out tops.
